There's something I've been wanting to tackle for a while…

The fry problem.

I love fries.

But they're loaded with calories and fat.

So I knew I had to figure out how to make fries that feel like a cheat meal, but actually have great macros.

And right off the bat I knew there was one major hurdle…

Getting the fries crispy without drowning them in oil.

So I went to work.

I learned pretty quickly that one of the biggest tricks is giving the potatoes an ice bath for 15-30 minutes.

We're in the lab after all, so let's get a little technical for a second…

  • Starch retains water.
  • And when you cook a potato covered in starch, the retained water makes it soggy.
  • Soaking the potatoes removes the extra starch (this is why the water gets cloudy).

So if you want crispy potatoes, soak those things.

Just make sure you dry them off afterwards.

Now comes the oil…

No big secret here.

Just spray them with avocado oil for 2-3 seconds (about 20-30 calories).

Then just season them however you want and toss them in the air fryer for a bit.

It's that easy.

Turns out, oil and water actually can make a good combo.
