The Summer Sorbet Series keeps rolling.

This week it's Raspberry Sorbet.

And it might be the best one yet.

Here's the thing about raspberries though…

They're super tart on their own.

If you froze them with just water, it would be brutal. Almost undrinkably sour.

So you need a lot of sugar to offset it.

That's where Lakanto's monk fruit sweetener comes in.

Raspberries. Water. Sweetener. A pinch of salt. A pinch of xanthan gum.

That's it.

In the Lab

When you're a kid, you're more susceptible to liking what your parents like.

And my parents love ice cream more than anyone I know. Especially my mom.

We always had ice cream in the house. We would eat it a couple times a week.

Because we ate ice cream so often, we never really saw it as a treat. It was always more of a tradition.

Any time we traveled, finding the best local ice cream shop was a non-negotiable.

And my mom has high standards.

If it's not homemade, she's not going to eat it.

I'm serious.

She won't step foot in a Ben & Jerry's.

I'm convinced she's the reason I'm an ice cream fanatic (and lowkey snob).

So when I lived at home, my mom was my taste tester for every recipe I made.

I'd bring her a new flavor and watch her face.

If she liked it, that was the only confirmation I needed.

Nothing validated a recipe more.

Without her, I really don't think I would have gotten as obsessed with ice cream as I have.

Without her, you're probably not reading this right now.

And she just turned 60.

Thankfully we were together in Maine for it.

For her birthday last year, I made a homemade version of her favorite flavor: matcha.

But 60 is a big one and I'm trying to top it.
