This week we're doing the Chocolate Vanilla Twist.
You know that soft serve mixed swirl you can get at the store?
That's basically what this is.
The secret is a low-calorie chocolate ganache (more on this later) mixed into a vanilla base.
One of the "flaws" of the Ninja Creami is that the mix-in setting doesn't reach all the way to the bottom.
But for this recipe, that's not the flaw…
That's the feature.

In the Lab
I've been trying to crack the code on a low-calorie chocolate ganache for years.
(If you're a chef, I know it's not technically ganache...but come on…just go with it.)
This actually might be my longest running experiment of all time.
But last week I finally figured it out.
And I never would've guessed it would be this simple.
In the past the big issues I've run into are: the macros suck, the texture is off, or you have to buy some random niche ingredient that you'll never use again.
Then the other day I saw an instagram reel that inspired me to try something new.
Cocoa powder + sugar-free maple syrup.
On the surface I knew the consistency of the maple syrup could be a winner so I gave it a go.
I had to play around with the ratio a little bit but here's where it landed:
By weight, two parts syrup and one part cocoa powder.
That's it.
The texture comes out identical to store-bought frosting.
I know that sounds wrong, but it's not.
And cocoa powder has surprisingly great macros. High fiber, decent protein, low calorie.
It is a more bitter chocolate flavor, but you can customize it however you want.
Add extra sweetener or salt. Hazelnut extract. Chocolate protein powder.
Put it on toast. Swirl it into a Creami pint. Use it as icing for a cake.
I've already used it in two recipes this week alone.
This one's going to show up a lot.
