This week we're doing Barebells Protein Ice Cream.

It's crazy simple. Just take a Barebells protein bar and throw it in the vanilla Creami base.

But you need to microwave it for about 10-20 seconds first.

After that, it mixes in and creates this chewy, nougat-y texture.

Then the chocolate hardens up and forms little chocolate chip pockets of its own.

It's basically my chocolate chip hack...

But in a totally different form.

Will it work with other protein bars?

Not all of them.

Quest bars are too firm. They'll just freeze into chunks.

Built bars are too marshmallowy. They'll get stuck in the Creami blade.

Barbells' caramel-like consistency is just right.

I tried Defiant Chocolate Shreds recently.

They're little chocolate shavings, kind of like what you'd see on top of a sundae.

The ingredients are clean. Cacao, whey protein isolate, erythritol, monk fruit, cocoa butter.

That's basically it.

Each serving packs in 10 grams of protein with only 130 calories…

For chocolate.

And it tastes like straight up dark chocolate. You'd never know this is a healthier version.

Also worth mentioning Defiant was one of the brands hit by the recent EPG fallout.

They spent the last year reformulating, and cacao is the only fat source now.

The catch: $20 for 8 servings.

That's expensive.

But this is a small business putting out their first product since getting hit hard by the EPG incident.

If you're already spending $15 on the big brands, you might as well put that toward someone who'll actually notice your order.

In the Lab

I worked at Cold Stone a couple weeks ago.

(long story lol, video soon)

And I learned something that changed how I think about cake batter ice cream.

They don't flavor their ice cream from scratch.

They just add heat treated cake mix to an unflavored sweet cream base.

So I tried the same trick with brownie batter.

Took my chocolate ice cream base.

Mixed in Lakanto's sugar free brownie mix.

Added a touch of extra sweetener and some black cocoa powder for that deep, dark brownie look.

The result:

Here's the part that surprised me…

When I looked at the ingredients, Lakanto's brownie mix was already loaded with binding agents. Tapioca fiber, acacia gum, oat fiber, guar gum.

All the stuff that normally does xanthan's job.

So I didn't need to add it.

And you get 15 grams of fiber per serving just from the mix.

One more thing:

It's keto. Only 3 net carbs per serving.

Cold Stone figured out the shortcut.
